This Cucumber Tomato Avocado Salad is bursting with fresh ingredients and tossed in a super simple dressing that makes it a stand out at any pot luck or gathering!
This past week we had our spring break. We spent the first half of the week in Sedona, Arizona riding mountain bike trails and going on lots of hikes.
The last half of the week we went camping with all the cousins and had an action packed time doing some repelling from cliffs, playing lots of games and trying to solve riddles around the campfire.
One of my favorite things about camping is how each family is assigned to prepare one meal for the entire group. It’s not a super big group, but by splitting up the meals like this, all we have to do is prepare one meal the entire time and the rest we get to just sit back and enjoy!
I wish I could say that I made this Cucumber Tomato Avocado Salad for our meal, but the idea came to me while we were camping, so the first thing I did when I got back was bring it to life.
You guys are seriously going to love this salad!
It’s filled with loads of cucumber, tomato and avocado, plus some purple onion and a bunch of feta cheese. It’s the perfect way to welcome in Spring!
We’ve been spending so much time outside in this gorgeous weather that we’re having, and a cool, refreshing salad like this one is the perfect companion to some grilled chicken or steaks, don’t you think?!
You have all the flavor and texture profiles going on in this salad – creamy avocado, tangy feta cheese, crisp cucumber, juicy tomato… pair all of that with the super simple dressing and it’s a home run.
My husband sat down with a giant bowl of this salad and devoured it.
My kids came home from school and immediately asked for a bowl of salad and then proceeded to lick the bowl clean!
It’s that good!
You’re going to love this fresh and delicious salad, I just know it!
