Apparently a few months back I thought I had my life under control and decided to sign my three youngest kids up for the Spring Soccer League, all the while, my oldest daughter is in club swimming.

Guess what folks… my life is NOT under control.

It’s just a blur of calendar events that include soccer practice, dentist appointments, swim meets, cub scouts and have mercy, it’s also tax season.

I’m literally drowning in mom duties, grasping for air and easy one skillet dinners to make my life a little easier.

And heaven forbid I make a dish that my picky 6 year old doesn’t like, cause then it’s all tears and whining and I’m thisclose to the end of my rope and ready to hang myself on it.

Maybe that’s a bit dramatic.

I guess when it comes down to the end of the day I know I’ll survive. And I’m sure every Mom and Dad out there knows exactly what it’s like to feel like you’re ready to just ‘Netflix and Chill’ while the rest of the family tries to hold it all together. But we persevere. We forge forward and most of all, we find easy and filling dinner recipes like this one.

Oh yes. Even my picky 6 year old loved this one skillet dinner recipe.

It’s the perfect combination of taco meat, rice, corn and lots of cheese. You can throw in a can of black beans or pinto beans if you want to bulk it up even more.

The toppings are also totally optional, but they seriously take this dinner to the next level.

We enjoyed this quick and easy dinner straight out of the pan the first night, but the next day we used up the leftovers in a warm flour tortilla and wrapped it up burrito style.

Mexican Beef and Rice Skillet

This quick and easy taco inspired skillet comes together so fast and will become a family favorite.

Ingredients

  • 1/2 onion, diced
  • 1 lb. ground beef
  • 1/4 cup taco seasoning (1 or 2 of the packets)
  • 1 (14oz) can diced tomatoes, undrained
  • 1 cup fire roasted corn kernels, drained
  • 3/4 cups white long grain rice, uncooked
  • 2 cups beef broth
  • 1 1/2 cup shredded colby jack cheese
  • Taco toppings:
  • Sour Cream
  • Diced Avocado
  • Sliced Black Olives
  • Chopped Cilantro
  • Salsa

Instructions

  1. Cook the onion in a large skillet over medium heat for 1 to 2 minutes, then add the ground beef, using a wooden spoon to break up and crumble. Cook until no longer pink. Drain and discard fat. Return skillet to heat.
  2. Add the taco seasoning, diced tomatoes, corn kernels, rice and beef broth, stir until combined. Bring to a small boil, reduce heat to a simmer and cover. Cook for 20 minutes, stirring at 10 minutes.
  3. Stir and top with the shredded cheese. Cover and cook on low for an additional 3 minutes or until cheese is melted. Top with the taco toppings of your choice! Enjoy!

Notes

You can use regular corn kernels in place of the fire roasted ones. You can also add a 1/2 cup of rinsed and drained black beans to the skillet before covering to cook if desired.

This was delicious! I added a can of seasoned black beans at the end. My husband ate 2 bowls... I kept it to one bowl and ate it as a salad over lettuce. Definitely adding to my rotation!
I followed the directions exactly and have been cooking this an extra 20 minutes so far as the rice isn't getting soft at all. This is the 3rd 'one pot' meal I've tried with the same results every time. Although I'm sure the taste will be fine I'm calling bologna on these one pot meals.
Thanks for two recipes (Mexican Beef and Rice and Cajun Chicken Pasta Skillet). We camp in a motorhome, and I am always looking for good recipes that I can make stove top or on an induction cooker. Don't want to heat things up too much, and when heading south in January there are no campgrounds open, so no power hook-up. Need creative, simple meals. These two sound like just the right thing.
Just so you know in case you were unaware 'Netflix and Chill' means sex. Recipe looks great though can't wait to try it

Wow this was great, not only was it really good but it was so easy. Mine unfortunately was kind of soupy. Probably because I cooked my rice first then added it at the end. Even so it was still really really good. My lovie gave it 5stars that's almost unheard of for a ground hamburger skillet dinner.
This recipe is amazing! My husband raved about it! I added black beans and that seemed to absorb the liquid nicely. I read the other comments how it took longer than 20 min to simmer, but mine was right on time.
This looks delicious! I'm going to try it tonight! Do you think I could use water instead of the beef broth? I don't have it on hand!
The recipe sounded pretty full poof except it's taken ol most 2 hours for the rice to soften and it's still hard. The dish is now dry and I had to add water. Next time I'll cook my rice before adding to this recipe. Great idea, horribly executed, cook rice before adding to dish,

Great recipe. Use long grain rice and it didn’t get completely cooked in 20 minutes so I put the skillet in the oven at 350′ for an additional 20 minutes. Turned out perfectly. Thanks for the recipe.

I have to say this was slamming!!! I usually just look at a recipe, print it and never make it but happy I didn't with this one. The only thing is I had to cook it double the time as the rice wouldn't cook but now I know how to perfect it for next time. Yum, yum, yum as I am eating some now as leftovers for lunch!
Of course! You would want to omit the beef broth and probably drain most of the juice from the tomatoes and corn before adding them to the skillet. I would let the mixture simmer for just a few minutes to heat through before adding the cheese. :)
my rice wouldn't cook so I did mines for like 45 minutes instead of 20 and it wasn't watery at all... may want to try cooking it longer next time.
Do you think I could freeze this....before I add the cheese and toppings? I was thinking of freezing it in individual serving size containers for my daughter to take to work. I can't wait to try it
