Spinach and Artichoke Grilled Cheese Sandwich

One of my favorite things to do is to take two recipes I love and marry them.

I’ve made Birthday Cake Egg Rolls, S’mores Popcorn, Jalapeño Popper Totchos, and I’ve even married three of my favorites into one with my Blueberry Crumble Cream Pie!

I’ve done it again with this Spinach and Artichoke Grilled Cheese Sandwich.

For the love of all things Spinach and Artichoke, you’re going to absolutely flip for this grilled cheese sandwich. Let me tell you why… two words – Pizza Dough.

I took the ever so convenient Pillsbury Pizza Dough and made that into my “bread” for this cheesy sandwich!

  1. LOVE that this is made with pizza dough – so genius, and it looks beyond delicious. It’s like an amazing cheesy gooey sandwich version of my favorite CPK pizza (spinach artichoke on thin crust…drool).

  2. What a great idea! I think you just invented the American Quesadilla. This could be a new way to use up leftovers. I think I’ll try my leftover spaghetti squash, shredded chicken, spinach, roasted red bell peppers, black olives and feta cheese. I have just a bit of each hanging around. Hello dinner.

  3. Wow! This is incredible — gooey, cheesy with an amazing combination of veggies!

  4. I love all things spinach artichoke!

  5. Looks like a really nice sandwich. I will try out this recipe this weekend.

  6. I was surprised at the recipe. I thought it was crustless bread—which I thought was odd, but I like odd. Delish combo of course—-the filling is like a hot appetizer dip.

  7. is this where i put in orders for lunch?!?!
    looks awesome!
