You know those days when you lock yourself in your room, call up your mom, then proceed to whine about how your family doesn’t appreciate everything little that you do for them?

Yeah, it happens.

More often then I would like to admit… my mom has started screening my phone calls.

It’s so frustrating to just be expected to manage every little thing, from laundry to cooking, and making sure we don’t run out of diapers.

I would probably faint if my husband ever came home with a pack of diapers because he noticed we were running low. I mean… it just doesn’t happen.

Heaven forbid anyone notice the clean floors, spotless mirrors, or the fact that I nearly pulled my hair out trying to wrangle two unruly toddlers at the grocery store.

Every mom deserves a shiny medal for surviving a trip to the store with young children.

Just sayin’.

Easy Chocolate Cherry Cheesecake Ice Cream (no ice cream maker needed)

I’m pretty sure I was tricked into this whole mothering thing with cute babies and the illusion of snuggles and sweet bed time stories.


However, when I am really feeling low {and my mom wont answer her phone} I whip up some easy ice cream.

My family always thanks me for that.

Easy Chocolate Cherry Cheesecake Ice Cream (no ice cream maker needed)

I found this tasty recipe for an Easy Peanut Butter Cheesecake Ice Cream from my friend Dorothy at Crazy for Crust. It looked magical, and problem solving. So I made it with Cherry Pie filling and Oreos.


I can’t describe how awesome this stuff is. You don’t need an ice cream maker to make this decadent Chocolate Cherry Cheesecake Ice Cream. You can even make it a low fat treat by using low fat (or fat free) cream cheese, whipped topping, and sweetened condensed milk. Which only makes this ice cream that much more magical.

Don’t worry, we’ll get to Father’s Day on Friday… for now, eat this!

Chocolate Cherry Cheesecake Ice Cream
So easy, and completely irresistible. You'll fall in love with this Chocolate Cherry Cheesecake Ice Cream. {recipe adapted from Crazy for Crust}
  • 8 oz Cream Cheese, softened
  • 8 oz Frozen Whipped Topping, thawed
  • 1 (14 oz) can Sweetened Condensed Milk
  • ½ cup Vanilla Yogurt
  • 1 tsp vanilla extract
  • 12 Oreos
  • 4 tbsp butter, softened
  • 1 (21 oz) can Cherry Pie Filling
  1. Place Oreos and softened butter in a food processor and pulse until the cookies and butter become crumbly and stick together. Set aside.
  2. In a large bowl add the cream cheese, whipped topping, sweetened condensed milk, yogurt, and vanilla extract. Use a hand mixer to blend thoroughly until smooth. Pour the cookie mixture into the center, then the cherry pie filling on top of that. DO NOT STIR!
  3. Use a rubber spatula to gently fold in the cookies and pie filling, two or three strokes is all you need. Channel your inner Cold Stone Creamy. DO NOT OVER MIX!
  4. Pour the mixture into a bread loaf pan, or your preferred freezer container, cover and freeze for at least 4 hours.
  5. Enjoy!

  4. Oh my gosh! I love this post. It don’t get any better when they get older…then you just get more P.O.’d because by the time they’re teens you would think all the training you gave them to thank, and be thankful would have sunk in and they would thank their momma once and a while! Erg fricken kids can’t live with can’t live with out um!! I must say I do love being a momma even though it has it’s ups and downs…thank goodness for beer and ice cream ; D Hang in there lady jane!

  6. So this looks drool worthy! Gorgeous photos!!! And I can relate to the whole diaper thing! We always seemed to be running low at the worst moments with my girls. But now, we have Amazon Prime and we’re part of that Amazon Mom thing and we get all our diapers, wipes, diaper genie refills, and dishwasher soap shipped to our house. I have yet to make a mad dash to the store because we’re low on diapers. You should check it out! You save 20%!

    Mother’s always feel unappreciated, but in the end your family knows you do so many things for them and couldn’t do anything without you there pointing them in the right direction. I know how men never seem to realize all a woman does during the day and you can get pretty depressed about it, but they surely mean well. Like my husband says, he can’t read my mind, just ask for help. Anyway, your ice cream looks delicious and I am going to have to try this — soon!! Hang in there, we all can commiserate with you.
