Quick and Easy Mason Jar Salsa

I take pride in the fact that I frequently shop at a Kroger Co. Family Store. In fact, I have been to almost every single different named Kroger store! It’s awesome that my one Kroger shopper card works at all the different stores and I can continually count on great prices.

Right now now they are having their Cart Buster Sale where you can get incredible prices on products you use daily, so it’s a perfect time to stock up!

I am a huge fan of chips and salsa so I wanted to share a quick and easy Mason Jar Salsa recipe with you that you can whip together in no time. The best part is that it used two products that are on sale right now at Kroger’s! Hunt’s Diced Tomatoes and Rotel Tomatoes.

This recipe is a real no brainer.

If you have a quart sized mason jar that has a REGULAR mouth opening then you can throw all the ingredients into your jar and screw the bottom of your blender right to the jar.

Seriously.

 

Just throw a crushed garlic clove, a whole jalapeno, half of an onion (coarsely chopped), and the juice of a lime into the quart sized jar.

Pull off a handful of cilantro and just throw it in the jar too.

Open up the Hunt’s diced tomatoes and the Rotel tomatoes and pour them into the jar. Since it’s a regular mouth sized jar you might have to spoon them, so they don’t fall all over the place.

Season with a little salt and cumin, then attach the blender blades and pulse away until smooth.

This salsa is so good. It’s like the kind you get at a Mexican restaurant while you wait for your dinner to come out.

Only you can’t stop eating it because it’s so good, and then you end up getting a second helping of chips and salsa and not having enough room for dinner so you end up just taking dinner home to eat the next day as leftovers.

Quick and Easy Mason Jar Salsa

Ingredients

  • 1 garlic clove, crushed
  • 1/2 small onion coarsely chopped
  • 1 jalapeno, stem removed
  • 1 lime, juice of
  • 1 handful of fresh cilantro
  • 1 (14.5oz) can Hunt's Diced Tomatoes
  • 1 (10 oz) can Rotel Original tomatoes
  • 1/2 tsp salt
  • 1/4 tsp cumin

Instructions

  1. Place all ingredients into a quart sized REGULAR MOUTH mason jar.*
  2. Screw on the bottom blades to the base of your blender to the opening of the mason jar.
  3. Blend for 20-30 seconds or until you reach desired consistency.

*Optionally- you can place all ingredients into your blender or food processor and process accordingly.

  4. OK random question… how do you get your mason jar off your blender without dumping it? That’s genius! Do you just flip the blender over, I’m assuming?

    • Haha, good question Kristen! It’s kind of mind blowing the first time you do it because it goes against all “Blender rules.” Normally the base of your blender (where the blades are) screws off so you can clean it. Just fill up the Mason Jar with all the ingredients and instead of screwing the blades onto the bottom of your blender, screw it on TOP of the mason jar. Turn it upside-down to blend, then right side up to unscrew it. Hope that clarifies it a little better!   9. How long does this last in the refrigerator & can you freeze it in the jars???

    • Hi Maryh, I bet it would last at least a week, maybe two. Whenever we make it, it’s usually gone in a flash! :) I’m not sure it would freeze well in the jars, might want to transfer to a zip close bag and try that! Thanks.
