Sausage, Egg and Cheese Breakfast Flautas

If your kids are tired of cereal for breakfast, and you’re looking for a way to switch things up, have I got something for you!

These Sausage, Egg and Cheese Breakfast Flautas are simple to make. Think about making them on Sunday, and wrapping them up and freezing them, so you can pull them out during the week when you need them.

These flautas are perfect for a breakfast on the go too.

A flour tortilla is stuffed with fluffy eggs, flavorful sausage and shredded cheddar cheese. Then it’s rolled up and baked till it’s nice and crispy. Serve it with a side of salsa and sour cream. It’s a wonderfully filling breakfast.

My husband even likes to grab some of these while he’s running out the door for work in the morning.

It makes me feel like a good mom and wife to know that the one’s I love have a full belly in the morning. :)

All you need is…. some sausage, eggs {a little milk}, cheese, and some tortillas!

Start off by breaking up the sausage in a large skillet and browning it.

Once the sausage is browned, remove it with a slotted spoon to to some paper towels. Wipe out the skillet and discard any fat.

In a large bowl combine your eggs, a little bit of milk and salt and better to taste. Whisk it up real good and pour it into the same skillet used to brown the sausage.

To make the perfect scrambled eggs you’ll want to make sure your skillet is hot before you pour the eggs in it. Let it sit for a minute, then use a flat spatula to pull the edges of the eggs towards the center.

The non-cooked eggs will fill in where the cooked eggs were. Let sit for a minute and then gently pull towards the center again. Repeat this process until all the eggs are cooked to your liking.

They should be light and fluffy, and not dried out.

Once the eggs are cooked, return the sausage to the pan and mix to combine.

Place about a cup of the mixture into the center of a small flour tortilla, add a little cheese, then roll up.

Place on a baking sheet, seam side down. Repeat for the remaining tortillas.

Bake them till they are slightly browned and crisp.

You can eat them right then and there or wrap some up and freeze for later.

Here’s how I do it:

First let them cool to room temperature before wrapping. I package two at a time since I have 4 kids it’s easy to pull out the right amount. {The husband can eat two at a time}

Wrap two flautas in a paper towel, then wrap them egg roll style in some tin foil. Be sure to write the quantity and what it is on the outside so you know for later.

Think of all the great combinations you could make – bacon, onions, beans, peppers… so many great options for a healthy and hearty breakfast!

Sausage, Egg and Cheese Breakfast Flautas

Yield: makes 10 flautas

Ingredients

  • 1 pound Pork Sausage
  • 12 eggs
  • 1/4 cup milk
  • salt and pepper to taste
  • 10 tbsp shredded cheddar cheese
  • 10 soft flour tortillas (soft taco size)

Instructions

  1. Brown the pork sausage in a large skillet over medium-high heat. Once it's browned, remove the sausage with a slotted spoon to a plate covered with paper towels to drain. Discard any remaining fat out of the pan, and wipe clean with a paper towel. Return pan to the stove top to cook eggs.
  2. In a large bowl combine 12 eggs, 1/4 cup milk, and salt and pepper to taste. Whisk till the egg mixture is an even light yellow color. Pour into the HOT skillet.
  3. Allow the eggs to cook for a minute before gently pulling the eggs from the outer edges towards the center with a flat spatula. Allow to cook for another minute, then pull in again. Repeat this process until the eggs are fully cooked. Should be light and fluffy.
  4. Return the sausage to the pan and mix to combine.
  5. Heat oven to 375 degrees F.
  6. Place a cup of the sausage and egg mixture in the center of a flour tortilla, add a tablespoon of cheese and then roll up. Place seam side down on a baking sheet. Repeat for the remaining tortillas.
  7. Bake for 15 minutes, then flip and bake for an additional 10 minutes.
  8. Let cool slightly and enjoy.

    These look great! I used to buy these from Walmart but its so unfriendly to the grocery budget. Do u have a preference for heating them up? Do u heat them from frozen? Or refrigerated?

    • If I’m we’re in a hurry in the morning they do great going from freezer to microwave. If we have more time, I’ll heat up the oven and just put them in there till they are warm again. Hope that helps! :)

I love these I make the breakfast burritos which include frozen potatoe cubes( did not like the hash browns) after I brown the sausage I throw in the potatoes and let them cook while I make the eggs. When I spread it out on a tortilla I add the cheese, wrap it up and put it in a ziplock bag then into the freezer. When I want one I put it ona paper plate , cover with the plastic dome lid, micro it for 2:15 minutes and enjoy. I am hooked on these.
