Spinach and Artichoke Flat Bread Pizza


Sometimes inspiration for my recipes come in the most random of ways.

Take this Flat Bread Pizza for instance; I was eating a Lean Cuisine for lunch one day {don’t judge, they are delicious}, it was a spinach and artichoke dip with a slice of pita bread.  Instead of just dipping the pita bread into the spinach and artichoke dip, I covered the pita bread with the dip, and the spinach and artichoke pizza was born.

Of course I needed to create my own spinach and artichoke dip, because let’s be real, Lean Cuisine doesn’t give you that much to work with.

I started off with a package of frozen spinach that I thawed and squeezed dry. Then I added my favorite Chunky Garlic by Gourmet Gardens.

I added a whole can of quartered artichoke hearts (drained) and a little mayo, gave it a good stir and added some cheese…

Lots of glorious {non – Lean Cuisine} cheese.

Instead of pita bread, I spread the hearty spinach and artichoke dip onto some Naan bread, which is basically just a flat bread that I found in the bakery section of the supermarket.

I baked it at a high temperature since the bread is already cooked, which allows the spinach and artichoke mixture to get bubbly and the bread to crisp up underneath.

This is a superb lunch, filled with healthy spinach and artichokes, then married together with bubbly and creamy cheeses. You will definitely want to make this one.

Spinach and Artichoke Flat Bread Pizza
  • 1 (10 oz) package of frozen spinach; thawed and squeezed dry
  • 1 (13 oz) can of quartered artichoke hearts (in water); drained
  • 3 large pieces of Naan (flat bread)
  • ¼ cup reduced fat Mayo
  • 1 tbsp Chunky Garlic by Gourmet Gardens
  • ¼ tsp salt
  • 1 cup mozzarella cheese
  • ¾ cup Parmesan cheese
  1. Pre heat oven to 450 degrees.
  2. Combine spinach, artichoke hearts, mayo, garlic, and salt in a large bowl, mix thoroughly.
  3. Add the mozzarella and Parmesan cheeses and mix again.
  4. Divide mixture between the 3 pieces of Naan (flat bread) evenly, and spread on top of each bread leaving about ¼ of an inch around the outside of the bread (to make a crust).
  5. Bake for 10-12 minutes or until the cheese is bubbly and slightly golden brown.
  6. Cut and Enjoy!

    • They can be tricky to find, but I usually find mine in the canned vegetable isle. Top shelf, near the other random canned vegetables (palm hearts, asparagus, etc.) Hope you can find some soon, this is such a tasty pizza!

  7. Yum! I’ve had that snack from Lean Cuisine. I think they also do a pizza that tastes similar to me, but I don’t think it has artichokes. This pizza looks way better!

    • Thanks Kelley! I’m always looking for short-cuts when it comes to cooking, so the Naan is always on hand when it comes to personal sized pizzas!

I totally had those LC dips yesterday for lunch with some bell pepper and thought “wouldn’t this be AWESOME on a pizza?” Probably the last thing you should think about when you’re trying to eat LC meals but whatevz :) this pizza looks awesome, girl! I am obsessed with spinach + artichoke dip and love that you used this on naan since naan is the best!

  11. This works! I love foods which require a bread or wrap to transfer to the mouth..pita’s, pizza’s, sliced bread, wraps, tortillas…the list goes on and on. Why do we even bother with knives and forks??

  12. This looks delicious! Do you know if it freezes well? I am the only one the likes artichokes in my family, and I cant eat all three at once.

    • I’m sure you could freeze the artichoke mixture before placing it on top of the bread. Then defrost it in the fridge overnight when you want to make a new pizza! :)

    • Hi Laura, I would think if you whittled the artichokes down to their hearts and cleaned them up real nice they would work perfectly! :)
