Super Easy Homestyle Buttermilk Mashed Potatoes


There is nothing better than fresh and fluffy homemade mashed potatoes.

But who really wants to take the time to make them from scratch? It usually involves peeling, cutting, boiling and finally mashing potatoes, which can feel like an eternity when all you want is potatoes. Like right now.

If you want fresh and fluffy homemade mashed potatoes in less than 10 minutes, then this recipe is for you!

{cause seriously, I am all about quick and easy}

There is no peeling, chopping, or boiling involved.

And yes, real potatoes ARE involved.

I love making these mashed potatoes for a quick and easy side dish that everyone will think you spent hours preparing. It pairs perfectly with grilled meats, meatloaf, ham, a spoon, or pretty much anything.

Start by washing 1 pound (about 5-6 medium) red potatoes and placing them in a microwave safe dish.

Do not pierce them with a fork. {resist the urge}

Make sure they are flat on the bottom, and not on top of each other.

Cover the dish with plastic wrap, and leave a little area for venting on the side. Make sure the plastic wrap is not touching the potatoes.

Microwave for 8 minutes.

Once they are done, carefully remove them from the microwave and remove the plastic wrap.

Almost done!

Add some buttermilk.

Don’t have buttermilk? Try using this buttermilk substitute…works every time!

Toss in some shredded Parmesan cheese, with some butter, garlic powder, salt and pepper…

Take your potato masher, and mash away.

If you like your potatoes super smooth, you can get out your hand blender and whip them till they are smooth. But personally I like those little bits of potato chunk here and there to add texture. Leaving the tender skins on the potatoes not only saves time, it boosts the taste and adds color to these hearty homestyle buttermilk mashed potatoes.

No more potato flakes, or powdered potatoes…mmm’ K? 

No excuses for not making fresh homemade mashed potatoes when they are this easy.

Super Easy Homestyle Buttermilk Mashed Potatoes
  • 1 pound (about 5-6 medium sized) red potatoes
  • 1 cup buttermilk
  • 3 tbsp butter
  • ½ cup Parmesan Cheese
  • ¼ tsp Garlic Powder
  • ¼ tsp Salt
  • ⅛ tsp Freshly Ground Pepper
  1. Scrub potatoes under running water and place in a single layer in a microwave safe dish.
  2. DO NOT PIERCE POTATOES (in the nicest voice possible)
  3. Cover dish with plastic wrap making sure to not let it touch potatoes and vent the top slightly to allow steam to escape.
  4. Microwave on high for 8 minutes or until potatoes are soft and tender.
  5. Carefully remove from microwave and add buttermilk and remaining ingredients.
  6. Mash with potato masher until you have reached desired consistency.
  7. Enjoy!
