Sweet Cherry Crisp


I am loving cherry season!

With cherries as cheap as .97 cents per pound, I am finding all sorts of ways to incorporate those sweet little bits of fruit into my everyday life.

One of my favorite desserts is a Crisp, or a Crumble, either way call it… it is dang good.

Sweet fruit on the bottom with a crispy crumbly oat topping.

With ice cream…it’s magical.

Back in the day before I had children, {and The Man and I were still a young married couple} we had a house that had a peach tree in the backyard. That little tree would produce so many peaches that we were giving away buckets full, and still had more than we could handle.

I would make fresh peach crisps on a daily basis.

That’s the beauty of a Crisp. Any fruit can be placed on the bottom, and there are many wonderful combinations out there. But sometimes a simple peach, apple, or cherry crisp is all that is needed.

It’s really simple to make; the only hard part is waiting for it to bake. Since you’re using fresh fruit, it takes longer to get the cherries soft. If you’d like to make it even easier, you can substitute the fresh cherry mixture with canned cherry pie filling. You’ll have to reduce the bake time by about half the time (basically just until the topping is nice and golden brown).  Another option would be to use frozen cherries. In that case, you can just substitute the frozen berries for fresh and reduce the cook time by only 10 minutes.

Sweet Cherry Crisp
  • 6 cups fresh pitted cherries
  • ⅓ cup sugar
  • 2 tbsp flour
  • ¼ tsp salt
  • 2 tbsp instant Tapioca
  • ¼ cup butter- melted
  • ½ cup brown sugar
  • ¼ cup flour
  • 1 cup quick oats
  • ¼ cup chopped pecans
  • ¼ tsp cinnamon
  1. Preheat oven to 350 degrees.
  2. In a small bowl combine pitted cherries, ⅓ cup sugar, 2 tbsp flour, ¼ tsp salt, and 2 tbsp Tapioca. Stir together until the cherries are coated evenly.
  3. Place one cup of cherry mixture in 6 individual sized baking dishes{pint sized mason jars will work, use the wide mouth jars} (or you can bake one big batch in an 8in x 8in dish). Set aside.
  4. In a separate bowl combine the ingredients for the crumb topping. Combine oats, brown sugar, ¼ cup flour, chopped pecans and melted butter. Stir until the mixture becomes wet and crumbly. Evenly distribute the mixture between the 6 dishes (or spread evenly across the 8x8in baking dish).
  5. Place individual sized baking dishes on a baking sheet to help prevent any spills in your oven and for easy transport in and out of the oven.
  6. Bake for 40-45 minutes.
  7. Let cool slightly before serving.
  8. Enjoy!
