Zesty Grilled Santa Fe Chicken + A Giveaway

Life has been a little bit hectic these past few days. We are moving {ugh} and things are getting boxed up and put away. We aren’t moving far, just a few miles down the road to a bigger house. But the extra space we are getting in this new house is going to be glorious.

Not to mention the hot tub… {oh yes.} Once it’s not 157 degrees outside, that will be nice!

I love the flavors of this bold and zesty grilled chicken.

The chicken is marinated in lime juice and then grilled to perfection. To make it a complete dish, I smothered the tender chicken with black beans, Zesty Sun Dried Tomatoes, fresh chopped cilantro, and shredded cheddar cheese.

Then it’s baked till bubbly and fragrant.

Those Zesty Sun Dried Tomatoes are incredible on this chicken. They become softer after being baked and burst with flavor in every bite.

This one pan chicken dish comes together fast, with simple ingredients like lime, black beans, sun dried tomatoes with zesty peppers, cilantro, and cheddar cheese.

Toss the skillet into the oven for just 10 minutes and you will have one tasty meal!

Top with a slice of lime.

Gorgeous.

There are some serious flavors happening here folks.

By marinating the chicken in lime juice you get a hint of tartness. Combine that with the bold flavor of the Sun Dried Tomatoes with Zesty Peppers and it’s a party in your mouth.

Zesty Grilled Santa Fe Chicken

Yield: 4 servings

Ingredients

  • 4 boneless skinless chicken breasts
  • 3 limes
  • salt and pepper
  • 1 cup black beans
  • 1/2 cup Sun Dried Tomatoes with Zesty Peppers
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Place the chicken in a zipclose bag and pour the juice of 2 of the limes into the bag. Let sit marinate in the fridge for 10 minutes.
  2. Turn on grill to medium high.
  3. Remove the chicken from the lime juice (discard lime juice) and season with salt and pepper to taste.
  4. Grill for 5-7 minutes on each side or until the chicken reaches an internal temp of 165 degrees.
  5. Preheat oven to 350 degrees.
  6. Remove from grill and place in an oven-safe skillet or dish.
  7. Top each chicken breast evenly with black beans, Sun Dried Tomatoes, cilantro, and then cheddar cheese.
  8. Place in oven for 10 minutes to melt cheese and warm ingredients.
  9. Serve with a lime wedge and enjoy!
