Baked Cornbread Chicken Nuggets {Joy’s Misadventures}

I am totally loving this recipe by Joy from Joy’s Misadventures. My kids could probably eat chicken nuggets and fries all day long. Well, that and cereal.  I met Joy back in May, and she is such a sweet heart with 2 completely adorable children. On her blog she creates loads of fun stuff like these cute Bento Boxes for her kids. Adorable! So here she is with this tasty recipe…show her some love!

Hi everybody! I’m Joy of Joy’s Misadventures. I had the opportunity to meet this lovely lady at Camp Blogaway and even opportunity to write a guest post for her. It took me a month to come up with an idea. I don’t necessary give The Munchkins a choice on what to eat, I just make what I feel like eating. I wanted something that children or at least my munchkins would eat (which isn’t too hard to find).

I was thinking of something bite-size for little hands and perfect for dipping. Like me, The Daughter loves to dip her foods. Ketchup is her favorite condiment. I even witness her dip her bagel in ketchup, I just shook my head at her. With these things to consider, I thought back what I would want as a child. My “go to” lunch choice was always chicken nuggets and fries. The great thing of making chicken nuggets is that I don’t have to fry the nuggets but I could bake them.

I was looking in the pantry for my some panko bread crumbs and instead I stumbled upon a box of stuffing I got from Camp Blogaway. Since I couldn’t find the panko but I thought it would be stuffing would work. It was a box of corn bread stuffing by Mrs. Cubbison.

Baked Cornbread Chicken Nuggets

Ingredients

  • 1 Lb of Chicken Thigh (you could use breast if you prefer)
  • 6 Oz of Cornbread Stuffing – Crushed
  • 4 Eggs
  • 1-2 Cups of Four
  • 1 Tsp of Salt
  • 1 Tsp Pepper

Instructions

  1. Preheat the oven to 400F
  2. Slice the chicken into 2 x 1 inch rectangles.
  3. Season the chicken with the salt and pepper.
  4. Setup little stations starting with the flour in a shallow bowl, then
  5. the eggs beaten in another bowl, and finally the corn bread crumbs into yet
  6. another bowl.
  7. Starting with the flour – coat the chicken pieces.
  8. Dip the chicken into the eggs
  9. And then cover the pieces with the bread crumbs.
  10. Place on a greased baking sheet.
  11. Bake for 30 minutes – less if you made smaller pieces. Make sure you
  12. check for doneness.
  13. Serve.

To go with the chicken nuggets, I also made some garlic fries. Instead of using a traditional potato, I used red potatoes.

Baked Red Potato Garlic Fries

Ingredients

  • 6 Cups of Sliced Red Potatoes – 1/3 Inch in Thickness
  • ¼ Cup of Diced Garlic
  • 2 Tbs of Olive Oil

Instructions

  1. Preheat the oven to 400F
  2. Mix all the ingredients together until the potatoes are well
  3. coated.
  4. Spread the fries into one thin layer.
  5. Bake for 20 minutes. Remove it from the oven and shuffle the fries
  6. around to make sure the fries get toasted on all sides.
  7. Finish up cooking the fries for another 25-30 minutes
  8. Serve

With the nuggets and fries, I made some steamed broccoli and multi-colored carrots. With the vase amount of produce at my disposal (I love farmers markets), I also incorporate some sort of vegetables in each meal.

I enjoy making classic dishes my own while expanding the palates of my children. I just hope I am raising non-picky children when it comes to food.

  2. Love that these are baked and not fried. I don’t think I have ever seen corn bread stuffing in Toronto..will have to give it a try with some bread crumbs!

  4. Just found your blog thru RecipeLion. This recipe is really similar to one I used to get my kids to eat pork. I get a small half pork loin & cut it into nuggets. Coat with pork-flavor stove top stuffing I put thru the food processor. It’s so good they thought it was chicken. I made almost 100 one day out of a whole pork loin when I had 8 kids at my house (ages 2-10). There were NO leftovers!
