Mini Taco Bites

Summer has officially begun!

My kids are home from school, all of them… ALL of them…

It started out great, with all my kids playing nicely together, building some crazy half car/half boat/half lawnmower out of Legos. I thought it was going to be a peaceful summer…then… it happened…

My son- “Kaylee gave me a wedgie!” {Kaylee is the oldest, and apparently not so mature}

Kaylee- “Well Crew pulled my pants down!” {Crew, my son, is second oldest, and also not so mature}

Ah yes, summer has officially begun…

I know first hand how difficult it can be to keep your kids entertained during the summer.

In order to avoid a mutiny, I have gathered 9 very talented bloggers to each come up with a creative and easy lunch idea for your kids this summer. Let’s give that box of Mac N’ Cheese a rest, and get our kids excited about lunch again!

Here is what I came up with.

These mini taco bites are extremely easy, and my kids went crazy for them. I don’t know about your kids, but mine love to make their own food. So putting all the ingredients out for them to create their own Mini Taco Bites was a big success.

All I did was pull out a can of black beans, and warmed them up in the microwave. I used little cups for the sour cream, cheese, salsa, and sliced olives. I gave each of them a few of those Tostitos scoops, and they went to town!

Because of the black beans, these are high in fiber, and not to bad for your little ones.

Feel free to add other ingredients your kids might enjoy, like diced avocado, corn, or diced tomato.

Mini Taco Bites

Ingredients

  • 1 can of black beans, drained
  • 1/2 cup sour cream
  • 1/2 cup cheddar cheese, shredded
  • 2 tbsp salsa
  • 1/4 cup black olives, sliced
  • Tostitos Scoops tortilla chips

Instructions

  1. Place black beans in a microwave safe dish and heat for 30-45 seconds.
  2. Put sour cream, cheese, salsa, and olives in separate little bowls.
  3. Place a few Tostitos Scoops on each plate for your kids to build their own taco bites.
  4. Enjoy!

  1. I make a version of these, but for grown ups! I put out tequila-lime grilled chicken (shredded), black beans, guacamole, cheese and salsa with the scoops. I serve them to our friends with margaritas on the deck as appetizers in the summer. The grownup love customizing them too:) I will be making this kids friendly version for my children’s lunch this week! Great idea:)
