Brussel Sprouts and Bacon

When I was younger I used to get out of taking naps by being adventurous with food.

My parents would introduce foods like coleslaw and potato salad during lunch. If you wouldn’t eat it you would have to take a nap. So, I ate. My brother and sister…would not. I stayed up, while they took naps.

Nah, nah, na-nah, nah!

I remember when we had to eat brussel sprouts for the first time. My parents were so proud of my grown up taste buds. Little did they know, that brussel sprouts were only tolerated because of the gobs and gobs of Cheese Whiz I applied.

I mean really…

Brussel Sprouts??

Now that I am a grown up (kinda), I saw this box of Brussel Sprouts and thought I would see how they really taste with my big girl taste buds and all.

I just thought they were so cute, like little tiny cabbages.

So this is one of the easiest vegetable side-dishes you could throw together. And it is surprising VERY tasty!

I just quartered all the Brussel Sprouts, diced half a purple onion, and of course chopped up some thick cut bacon {it’s the grown up Cheese Whiz}.


Throw the bacon in a hot cast iron skillet till it is half-way to crisp. Throw in the onion and Brussel Sprouts. Stir every once and awhile, but it’s great to get the nice caramelizing on the Brussel Sprouts from the bacon grease. It adds great flavor and texture.

Yes, I even made my kids eat the Brussel Sprouts.

No, I didn’t make them take naps if they didn’t eat it.

….but they couldn’t eat dessert…. {my kids will do anything for dessert}

I gobbled up these cute little guys. I couldn’t believe how tasty it was! If you haven’t tried Brussel Sprouts lately, try this. It could change your life.

Well, not really, but it could get you out of taking a nap.

Brussel Sprouts and Bacon

Ingredients:
10oz. Brussel Sprouts; quartered
1/2 purple onion; diced
3 strips of thick-cut bacon; chopped
Salt and Pepper to taste

Directions:
Add bacon to a hot cast iron skillet. Render bacon till almost crisp, then add onion and Brussel sprouts. Stir every few minutes till onion is soft and Brussel sprouts have caramelized. Add salt and pepper to taste. Serve immediately.
