Cinnamon Roll Pancakes


If you’re looking for a breakfast that will knock your pretty little socks off- this is it.

These cinnamon roll pancakes are so rich and sweet. The vanilla cream cheese glaze that covers the top is like liquid gold.

It’s like getting cinnamon rolls without all the tricky yeast.
{I have yet to actually make home made cinnamon rolls because of the fact that you have to use yeast}
I found this recipe at Recipe Girl’s blog. Pure and utter genius!
I used my own pancake recipe but added the cinnamon swirl and the glaze from her recipe. You’ll end up with a fluffy pancake with a crispy sweet cinnamon swirl throughout.
Topped with the cream cheese glaze and you’ll have the real cinnamon roll effect. It’s nuts how amazing these things are! My kids were going crazy!

I think these are going to be a regular for our Saturday breakfast feast. Does anyone else go crazy with Saturday morning breakfast? It’s my way of apologizing to my children for 6 mornings of cold cereal.
{but who am I kidding… they would eat cereal every meal if I let them}
Cinnamon Roll Pancakes
recipe adapted from Recipe Girl
Serves: makes 10 pancakes
For the Pancakes:
  • 2 cups Bisquick mix
  • 1 cup buttermilk (or regular milk)
  • 2 eggs
For the Cinnamon Swirl:
  • ½ cup butter, melted
  • ¾ cup brown sugar, packed
  • 1 Tablespoon ground cinnamon
For the Cream Cheese Glaze:
  • 4 Tablespoons butter
  • 2 ounces cream cheese
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla extract
  1. Mix Bisquick mix, buttermilk and eggs in a bowl until lumps are gone.
  2. In a separate bowl combine melted butter, brown sugar, and cinnamon. Stir till smooth, and spoon into a zip close bag.
  3. Heat a skillet over medium-low heat. Spray with nonstick spray. Scoop about ¾ cup batter onto the skillet. Snip the corner of your baggie of filling and squeeze a spiral of the filling onto the top of the pancake. When bubbles begin to appear on the surface, flip carefully with a spatula, and cook until browned on the underside, 1 to 2 minutes more.
  4. For the glaze add the cream cheese and butter to a microwave safe bowl and heat until melted. Whisk till smooth and add powdered sugar and vanilla, whisking again till smooth.
  5. Pour glaze on top of a pile of cinnamon pancakes, let your inner child take over and dig in!

  7. I have to add that I agree with the whole homemade cinnamon bun thing. I want to make them, I really do. They for some reason intimidate me….besides the yeast factor…it’s the rolling out the dough part. My kitchen is not that large…I could use our kitchen table..but then I think about the mess. Oh boy. Now I just think I’m bugging out. 😉
