Shrimp with Pesto Pasta


Remember that Pesto sauce I made the other day??

Remember how I said it would be great with some pasta??

I have to share this with you.

I would feel bad if I didn’t.

Ok, so long story short-

For the last year and a half The Man has been working on the road trying to provide for our family. We see him barely every other weekend. Soon he will be working too far to travel home. Solution– we are packing up and moving with him.

So, I am pulling out all the food from the back of the pantry and putting it to good use.

Ramen and I go way back. {we used to date in college; we had almost every meal together}

It’s such a great pasta, it’s ready in no time because the noodles are already cooked. Plus you don’t always have to use the flavor packet {don’t get me wrong…flavor is nice}; you can make your own!

Enough about the pasta, just put it in some boiling water and get it ready. Cut up some zucchini, matchstick size.

In a large pan melt 2 tbsp of butter and add 2 cloves of garlic and the zucchini. Saute it all for just about 3-4 minutes, then sprinkle with salt and pepper.

Move the zucchini and garlic to one side of the pan.

Add about a 1/2 pound of uncooked shrimp to the skillet and cook on one side for 2 minutes, then flip.

You know they’re done when they turn pink in color, and the tails curl around.

Add the cooked {and drained} pasta directly to your pan of shrimp and zucchini.

Then 1-2 tbsp of the amazing pesto sauce {depending on how much you feel like}.

Give it all a good toss, and serve warm. Feel free to top it off with some fresh Parmesan cheese!

If you made the Pesto, you’ve got to make the Pasta.

When you make the Pasta, don’t be surprised if Ramen starts hanging around your house more often. {it’s ok, he’s one tasty date, plus he’ll always make you happy!}

Shrimp with Pesto Pasta

2 – 4oz Ramen Packages
2 zucchinis- cut into matchstick size
2 cloves garlic- minced
2 tbsp butter
1/2 pound uncooked shrimp
2 tbsp Pesto
S/P to taste

Parmesan Cheese {optional}

Cook Ramen according to package directions (omit flavor packet). Drain and set aside.

In a large pan, melt butter. Add garlic and zucchini, saute for 4 minutes. Move to one side of pan.
Add shrimp and cook 2 minutes on each side. Add Ramen and Pesto directly to pan and toss with tongs to evenly combine. Top with fresh Parmesan cheese {optional}. Serve warm.
