It’s hard to always come up with fresh new menus week by week, so by sharing our ideas everyone wins! Each Monday is your chance to update your weekly menu. Post what your eating this week in the comments, and grab a few ideas while you’re there!

I’m still working on my Flat Belly Diet, so my menu isn’t the norm just yet. I did take a small break from the diet this past weekend while family was in town, but I am back on track today! Is it just me or are the weekends always the hardest?? “I’m starting again on Monday”  is a popular phrase heard all weekend long! {If I only had a nickel for every time someone uttered those 5 little words…}

    Sunday- Sun-Dried Tomato and Artichoke Chicken
    Monday- Tamale Pie
    Tuesday- Breakfast for Dinner (Blueberry Pancakes, Turkey Sausage and Fruit)
    Wednesday- Pork and Green Chile Casserole
    Thursday- Spence's Graduation Banquet (Filet Mignon, yum!)
    Friday- Graduation luncheon (chicken salad sandwiches, chips, fruit and other lunch stuff- P.S. You are invited!)
    Saturday- Dinner with our uncle Wally (probably somewhere where I can get a good salad, hopefully)

    Lots of partying this weekend but hopefully it will be healthier partying.

    We're so busy this week that I'm not cooking every night, but when I am I'll be making Fajitas and black beans with tomatoes over rice!

    Sunday: Chicken Enchiladas
    Monday: out to eat with my in laws
    Tuesday: Citrus Chicken w/ Rice Pilaf & Green beans with herb butter
    Wednesday: "everything in the house" salad with honey lime dressing
    Thursday: Pork chops & collard greens
    Friday: Tacos & Tostada's
    Saturday: Greek Pizza & Salad
